PALEO STRAWBERRY CRUMBLE

Spring is almost here and summer isn't too far around the corner and i'm just a little bit excited.  With that being said, there is no better time  to start on summer desserts than the here and now so I whipped up the first of what is sure to be many fruit themed desserts over the next few months.  

Here's the deal with this dessert, it is a strawberry crumble but totally paleo which means there are no grains, or refined sugars in play here.  Yes, you heard that right so if you are paleo or simply trying to watch those sugars, keep reading, you'll love this recipe.

Crumbles are great on their own for a quick snack or with ice cream and yes, i know this crumble is paleo so here's the deal... you'll have to come back for my paleo ice cream recipe. Yes, seriously we are taking dessert back and if I haven't said it yet, there is no reason for anyone to live a life devoid of dessert so here we go:

INGREDIENTS

 2 cups halved strawberries

1 tablespoon arrowroot flour

1 teaspoon pure vanilla extract

1/2 tablespoon fresh lemon juice

1 tablespoon maple syrup

FOR THE CRUMBLE

1/2 cup almond flour

1/4 teaspoon salt

1 1/2 tablespoons coconut oil

1 1/2 tablespoons maple syrup

METHOD

1. Preheat oven to 350 degrees and mix the strawberries, arrowroot flour, vanilla extract, lemon juice and maple syrup; and put mixture in a baking pan. In a separate bowl mix together the almond flour, salt, coconut oil and maple syrup. Spread mixture over strawberries and bake for 35 minutes. 

Please note that this recipe is easily doubled and if you would like more especially since as is, it serves two.
